These wings came about really organically for the birthday party of a good friend.
2 dozen chicken wings cut into drums and wings.
Ingredients for the brine
2 quart of water
1 cup brown sugar
1 cup salt
4 whole stems of cilantro
4 stems of green onions
2 tablespoons of oregano
1/2 cup of garlic powder
In a large pot (Karahi pot if you have it) Mix all the ingredients together except for the water on the stove and turn on high. Once the items start to brown add the 1 quart of water. Bring all the item to boil and continually stir. Once the sugar and salt dissolve turn off heat.
Wait until the the mixture cools to room temperature. I am inpatient, so I drop 3 trays of ice in the mixture to cool it down.
WARNING: if you don’t wait for the mixture to cool and drop raw chicken in the chicken will start to cook and can cause bacteria issues.
Once the mixture is cool drop all of you meat into the pot. Cover the pot and let it sit for two and a half hours. To enhance the flavor overnight the entire pot in the fridge.
Ingredients for the sauce
2 packs of McCormick white chicken chili packets
1 pack of McCormick taco seasoning packets
1 tablespoon of sazon packet season
2 teaspoons of black peppers
2 teaspoons of complete seasoning
1 tablespoon of vegetable oil
1 tablespoon of lime juice
Mix all the seasoning together in a bowl, except the lime juice. Make sure that all the seasoning is mixed together well.
Remove the chicken from the brine and add it to a separate bowl. While the chicken is in the bowl prep you baking pans. In your pan/s add the tablespoon of vegetable oil.
If liquid is in the bowl where the chicken is then pour that excess liquid directly to the pans.
Preheat your oven to 400 degrees.
In the bowl with the chicken add a little bit of the lime juice and a spoonful of the the seasoning. Toss the chicken in the seasoning. Then repeat until all the seasoning and lime juice is gone.
Once all the chicken in properly seasoned line the chicken in the pre-prepared pans. Place the chicken in the oven and cook for 30-45 min.
Once the chicken is done garnish with cilantro and serve.
